Coffee cake is a cake that is often served with coffee. Despite the name, a coffee cake does not have to contain coffee. One of the many recipes for this cake is called Café Latte Cake. The ingredients that go into this dessert are oil and flour baking spray, one container of coffee, flavored yogurt, three tablespoons of freeze-dried coffee, three egg whites, pinch of cream of tartar, two cups of all purpose flour, one and one half cups of granulated sugar, two teaspoons of baking powder, a one fourth teaspoon of salt, a pinch of ground nutmeg, a three fourth cup of softened butter, one and one half cups of cream, and 3 tablespoons of confectioners’ sugar.
First, the oven should be heated to 350 degrees. Spread oil and flour baking spray over three eight and one half inch round pans. Set aside and mix the freeze-dried coffee with some water until it is completely dissolved. Add in the coffee-flavored yogurt and stir until smooth. In another bowl, beat the egg whites and the cream of tartar until the mixture is foamy. Slowly add in half a cup of sugar and put aside. Whisk flour, baking powder, nutmeg and salt together in a small bowl. In a big bowl, beat the butter until it is smooth and add the leftover sugar until the mixture is light in color.
Next, mix the flour mixture with the butter combination and beat until it is smooth. Layer in half the egg whites and fold in the remaining whites until completely blended. Put it into the oven for about 25 minutes. Once that time is up, invert the cakes and after removing the pans, invert again. Once they have cooled, layer with whipped cream and sprinkle with nutmeg.
