Strawberry chiffon pie is a pie that has been made for many years. It starts out with fresh strawberries, washed and sliced. Then sugar is added. Some recipes call for unflavored gelatin and others for strawberry gelatin. This pie uses beaten egg whites, but since they will remain raw, you may prefer to use powdered egg whites. The strawberries should be mashed. Mix the gelatin with water and heat to make the gelatin dissolve. This will have to be cooled before it can be put into the strawberries. When it is cooled and mixed with the strawberries, this mixture is to be cooled. When it is cool, mix in the stiffly whipped egg whites and the whipped cream. Pour into a prepared pie shell and cool until gelatin is set.
Some recipes call for using a graham cracker crumb crust. This is a delicious variation from the regular pie crust. If you are watching your calories, you can use artificial sweetener instead of sugar. You can also substitute diet Dream Whip topping for the whipped cream. This makes a delicious dessert, especially after a large holiday meal.
Another delicious recipe uses vanilla wafers mashed into small grains for the crust. It also calls for chunks of vanilla ice cream to be added to the warm gelatin mixture. Cool until it is set, then put whipped cream around the edge and in the middle and decorate with strawberry halves. It will be a beautiful centerpiece for your holiday dinner.
